Dandy Cooling Company is responsible for West Coast shipping for Duda Farm Fresh Foods. Their Salinas refrigeration plant operates seasonally, running during California’s summer growing season, when it cools and ships produce including lettuce, leafy greens, celery, broccoli, and cauliflower. Field heat is removed from freshly harvested vegetables with vacuum cooling tubes: thoroughly wetted produce is placed in the tube, which is sealed. The pressure in the chamber is then reduced until the boiling point of water is lowered to the point at which the moisture on the surface of the vegetables evaporates, cooling it. The refrigerated warehouse portion of the facility is used for pressure cooling and short-term product storage.
